- 8–9 tbsp rolled oats (≈80–90 g)
- 1 ripe banana
- 1–2 tbsp extra virgin olive oil
- A handful of chopped walnuts (≈30 g)
- 90% dark chocolate, chopped (25–30 g)
- 1/2 tsp ground cinnamon

Preheat oven to 180 °C (350 °F) and line a baking tray with parchment paper.

In a bowl, combine oats, walnuts, dark chocolate, cinnamon, and a pinch of salt if desired. Mix well.

Peel the banana and mash it thoroughly with a fork into a smooth puree.

Add olive oil to the mashed banana and stir.

Pour the wet mixture into the dry ingredients bowl and mix until well combined.

Spread evenly on the prepared baking sheet into a 1 cm (~0.4 in) thick layer. Compact with a spatula.

Bake for 25–30 minutes at 180 °C until edges are slightly golden.

Remove from oven and let cool completely to crisp up. Break into chunks or serve in portions.
How to serve
It is top with plain yoghurt and slices of banana or berries. You can also crumble it over quark-style fresh cheese or have it as a snack with a coffee or a tea.
Notes
- If you like it crunchier, reduce the thickness to ~0.7 cm and bake at the upper end of the time range.
- Sweeten (only if you need to) with 1–2 teaspoons of honey or very finely chopped dates, although the ripe banana already provides sweetness.
- Store in an airtight container for 3–4 days.
